There's always one banana in the fruit bowl which we just don't get round to eating. Last week there were three there. They're so off putting when the skins have turned black, but it's at this stage when they're perfect for using in baking.
I had just the right amount with three to make this really easy Banana Muffins with Chocolate Chips recipe. The bananas don't look particularly appetising once they've been turned to mush but the end result is worth it.
Bananas may languish in the fruit bowl long enough for them to turn black, but they don't last two minutes once they've been turned in to muffins.
I've also been making some Artisan No Knead Bread which I've seen on various blogs just lately. I love it toasted and Mick likes it for his work sandwiches. It's so easy to make too.
Daniel came home from university on Friday for the weekend so I made a double batch yesterday so that he could take a loaf back with him. I don't think it will last long when his housemates catch sight of it.
Oh lovely muffins, I tend to freeze my manky bananas & whiz them into a porridge breakfast drink Mike & I have. I shall take a look at the bread recipe it looks lovely.
ReplyDeleteThere's loads of uses for over ripe bananas, no need to throw them away at all. Definitely take a look at the bread recipe, it's so easy, though a little messy, but it tastes great.

DeleteThe muffins look scrummy, I have an intolerance to bananas so wouldnt be able to eat them but I can certainly see why they disappear so quickly. Loved the look of the bread, no knead would suit me, followed the link, thank you, might just give it a go.
ReplyDeleteThe bread really is delicious, the only problem is that you have to think about making it in advance as it has to stand for so long. Still, it's a good recipe if you want just cooked bread for breakfast as it can be prepared the night before.
DeleteYou have been busy. I love bananas when they get to this point to me that's when they are at their tastiest. Your muffins look very nice. Like you I keep seeing this Artisan bread. I would love to make it when time permits. It certainly looks very appertising and there's nothing like the smell of fresh baked bread is there.
ReplyDeleteI wouldn't eat a banana when it gets to this stage, not unless it's in baking. It doesn't take any time at all to make the bread, it's so quick. I tend to mix it up after tea and then it's ready to bake in the morning, and as you say, the smell of bread baking fills the house.
DeleteI must get around to making this bread but I don't know what to bake it in as my heavy casserole pans have plastic knobs on top which will not tolerate very high temperatures. What do you use and how large is the loaf?

Definitely don't use your casserole pan with a plastic knob, the oven gets so hot that my dish has left a mark on the wooden chopping board I put it on when it came out of the oven. I use a Le Creuset stoneware casserole dish, it's not huge and I didn't know if it would be big enough, but it is. When I baked the double batch yesterday, I chanced one of the loaves in a Pyrex casserole dish and it was fine. I have a set of three Pyrex casserole dishes and I used the largest one, it fit fine. I thought I'd need a larger dish than you actually do. I hope this helps and I look forward to hearing what you think of the bread.

ReplyDeleteMick buys, and eats, green bananas. I like mine somewhere between the two. Both the muffins and the bread were delish, I can't stop making the bread, it's really nice toasted.
DeleteThe muffins look so good. I love no-knead bread. We've been using a different recipe for years and we all love it around here. Easy and good!
ReplyDeleteThe muffins didn't last long at all. I usually use my breadmaker to knead my bread dough then I shape it in to rolls and bake it in the oven. This no knead bread is something a bit different and makes a nice change.

ReplyDeleteI must admit that anything banana flavoured wouldn't be my first choice, but I'll eat them if there's nothing else around. The crust is my favourite part of the bread, it's just soooo.....crusty. I love it.

ReplyDeleteThe bread looks good too, I havent heard of no knead bread ,let alone tried it but it sounds as if it wont be such hard work as normal bread.
Your comment made me chuckle. That's the sort of thing which happens in our house, I can't put anything on one side, someone always takes it. The bread is really simple, it's a case of mixing the ingredients together, leaving it to do its thing and then tipping it in to a dish with a lid to bake, it's that easy.

ReplyDeleteThe casserole dish I use to bake my bread in isn't huge, I wondered if it would be big enough the first time I used it, but it's fine. I used a Pyrex casserole dish at the weekend and that worked fine too. It was the biggest in a set of three. I hope you give it a go, the bread's delicious.

DeleteYou're welcome. I was just thinking, if you don't think you've got a big enough dish, you could always split the dough in to two and use two smaller dishes. I would say though that if you've got an average size casserole dish, it will be fine.

I remember mashing bananas when I was weaning Daniel and Eleanor, it used to turn my stomach. I think it's the crust on the loaf which makes it, absolutely scrummy.

ReplyDeleteThe muffin recipe is really easy, they don't take long to make. I can definitely recommend the bread, it's another simple recipe, no kneading so it's really easy to make and delicious too.
