Berry Delicious Muffins

I didn't think I was going to get a very big blueberry harvest this year from my three bushes, but one of them has come good, and although it's not a huge harvest, it's done very well.

I decided I'd use some of the berries to make Blueberry Muffins. Unfortunately, I decided this after I'd picked a much larger amount a couple of days previously and they'd all been eaten, so there weren't as many berries to add to the muffins as I'd have liked, but I made do.

I used a recipe I've used previously from allrecipes. They're so easy to make and taste delicious.

I laid out my spotty dotty cases. Aren't they pretty? These aren't huge muffin cases, but I've found this recipe will make a dozen of this size if there aren't many blueberries in the mix. If you add the whole 225g as the recipe states, it will make many more.

Instead of incorporating the blueberries in to the mixture, I just pressed a few in to the top of each muffin before they went in to the oven, they worked out just as well.

I've since made another batch with many more blueberries included, they don't last long in this house.

    1. The blueberry bushes haven't done so well the last couple of years so it's nice to get a decent harvest again this year.

    3. I really don't know how to change things, or I would. I'm not very technically minded.

    1. Blueberries are one thing which all the family will eat, which is saying something as I live with picky eaters. I've never heard of adding lemon zest to blueberries but it sounds delicious with the added zing.

    1. Blueberries like acidic soil, so I grow them in containers in ericaceous compost, it makes things easier. It's been a few years since I've had so many to pick so I'm making the most of them this year.

  10. They look great Jo. Our blueberries have been disappointing this year, in fact one of them has just about died.Dont know what I did wrong!I'm eating a Weightwatchers blueberry muffin now (5 points-my treat for the day) because I wont be able to make my own like you!

    1. I've had a couple of years of disappointment with my blueberries so I'm making the most of them this year. Are you growing your blueberry bushes in ericaceious compost as they're acid loving plants. I've had a few Weightwatcher meals and treats and they're quite tasty, I was surprised.

    1. I think my next baking session will be flapjack. I've been promising to bake it for Eleanor for ages but haven't got round to it yet, though saying that, she could always make it herself.

  13. How great to pick your own blueberries, I tend to buy them frozen and they work for smoothies, and of course muffins. Yours look very nice!

  14. Ooh, yum!

I make a 'trifle' with blueberry muffins in the base, custard (no jelly), and blueberries and cream on the top ... my lot love it :)

    1. I'm not a lover of trifle, but I can see how delicious that would be if you are. It's the custard I don't like, so I don't really think there's any getting around that. I know my mum would enjoy it though, she loves those type of desserts.

You know my younger kids don't like blueberry muffins, I'm always like GASP!!! They are so delicous, I still make them for me and the teenager though... These look great!

  16. I've just caught up with your news. I'm sorry to hear that Daniel's results day ended up being so traumatic - but really pleased to hear that everything worked out in the end. I expect that you are now in the middle of 'getting things organised for uni'!!!! Jx

    1. I think the main thing is that he got the place he wanted in the end, which we're all so pleased about. Lists have been made, there's lots to do and organise before he goes, but he's got a month yet so no panic.

  17. Oh yum! Any fruit that is brightly coloured, like blueberries, are full of wonderful antioxidants and thus mititgate some of the guilt of having them in cake form! I love blueberries that have been macerated in a little sugar and squished a bit, over fat-free Greek (or strained) yogurt. Delish!

    Best wishes,

    1. That's my thoughts exactly, the goodness that the berries are doing far outweigh all the bad things in the muffins. I'm not a lover of yogurt really, though I suppose this would change it's flavour so it might make it a bit more tempting.
